A freezing machine is the main equipment used for freezing plantain, but different types of freezing machines can be selected depending on the scale and requirements of the freezing process.
- Fluidized bed freezer is suitable for quick freezing of plantain in small to medium production volumes. This equipment uses strong air circulation to rapidly freeze plantain, featuring fast freezing speed, low energy consumption, and uniform freezing.
- Tunnel-type freezing machines are commonly used in medium to large-sized plantain freezing plants for continuous production. Plantain enter the low-temperature tunnel via a conveyor belt and undergo rapid freezing through a multi-section cold air circulation system.
Furthermore, different varieties and stages of plantain ripeness have different requirements for temperature and time during freezing:
- Ripe plantain have a higher sugar content and a lower freezing point, making them suitable for quick freezing at around -30℃ to prevent discoloration and softening.
- Unripe plantain have firmer flesh and can be quick-frozen at -35℃ to -40℃ to ensure the core temperature quickly drops to -18℃.
